Ingredients
1 large carrot, grated or peeled into ribbons (or two small ones)
1 small red or white onion, finely sliced
1 stick of leftover celery or any remaining broccoli
A handful of sultanas
A handful of cranberries
A handful of pomegranate
Leftover nuts or seeds, chopped or whole
1 tbsp lemon juice or vinegar (white wine, cider or red wine)
1–2 tsp honey or a pinch of sugar
1 tbsp olive oil
Salt and black pepper to taste
2 tbsp sour cream or crème fraîche (ideal for using up opened pots)
½ tsp cinnamon
2 tsp cranberry sauce
2 tsp lemon juice or white wine vinegar
½ tsp sugar

Rinse the vegetables in water - no need to peel the carrots, just a quick scrub. Finely shred the red cabbage into thin strips. Grate or peel the carrot into ribbons and slice the onion finally.
Add the grated apple or any other leftover veg like celery or broccoli, sliced finely.Choose either the Sweet Mustard dressing or the Rich & Creamy dressing.
Whisk all dressing ingredients together in a bowl. Taste and adjust sweetness, acidity or seasoning.Add the vegetables to a large bowl and pour over your chosen dressing. Toss until everything is well coated.
Mix in any extras such as dried fruit, nuts or herbs. Chill and serve!
